If you love potato pancakes, give this crunchy, healthful variations a try. Combine broccoli, scallions and 2 tablespoons Lemon Basil Grilling Sauce in a bowl. Sprinkle on flour, season with salt and pepper, and mix. Form into 4 pancakes. Pour oil into a large nonstick skillet and heat until hot over medium-high heat. Add pancakes and cook until crisp and rich brown on bottom, about 6 to 7 minutes, turn and cook second side until browned. Remove, drizzle remaining Lemon Basil Grilling Sauce over pancakes and serve.
