Pork Medallions with Mango Chutney
6 tablespoons butter
8 pork medallions
1/2 cup heavy cream
1/4 cup Silver Palate Mango Chutney
watercress for garnish
Preheat oven to 350 degrees. In large skillet over medium heat, melt butter. When hot add pork and brown quickly on each side, then remove to a shallow baking pan. Deglaze skillet with cream, scraping up any browned bits. Add Silver Palate Mango Chutney, stir, and when mixed pour over pork. Cover pan and place on the middle rack in oven to bake for 20 minutes. Transfer pork medallions to a serving platter and keep warm. Correct seasoning in the sauces, then spoon over pork medallions. Garnish with watercress.
