Berries Best Sweet and Sour Red Cabbage

Serves 4 to 6
Ingredients: 

2 tablespoons unsalted butter or margarine
2 large onions, thinly sliced (about 4 cups)
1 small (2-pound) head red cabbage, outer leaves removed and cored, thinly shredded
1/2 cup hearty red win
3/4 cup Silver Palate It's The Berries
10 juniper berries
2 bay leaves
1 teaspoon dried thyme leaves
Salt and freshly ground black pepper to taste
1 tablespoon Silver Palate Raspberry Vinegar or more to taste

Directions: 

Melt butter in a large heavy casserole over medium-high heat. Cook onions just until limp, 3 to 4 minutes. Add cabbage and sauté until it starts to wilt, 5 minutes. Stir in wine, Silver Palate It's The Berries, juniper berries, bay leaves, thyme, salt and pepper. Cover and cook over medium-low heat until cabbage is very tender, 25 to 30 minutes, stirring occasionally. Uncover, raise heat and boil gently until liquid is reduced and coats cabbage, about 15 minutes. Stir in Silver Palate Raspberry Vinegar, check seasonings and cook a few minutes longer to blend flavors.
